Rhubarb Dhal
This Rhubarb Dhal recipe is a great way to use up some of the rhubarb from our community garden! It's a fragrant and flavourful dish, with the sweetness of the rhubarb balanced by the spiciness of the dhal. This is an easy and inexpensive meal that will warm up any dinner table! 1 onion

4 garlic cloves

1 tsp cumin seeds

1 tbsp garam masala

2 tsp cinnamon

Curry leaves

300g red lentils
-
200g rhubarb
-
1 tbsp sugar/sweetener

750ml veg stock

Handful of spinach/greens
step 1
Chop the onion and fry in oil until soft
step 2
Add chopped garlic and spices and cook for a couple of minutes
step 3
Chop the rhubarb into chunks, add to the pan with lentils, veg stock and sugar
step 4
Cook until lentils are soft, about 20 mins. Add more water if needed
step 5
Add greens for last few minutes of cooking
