Cavolo Nero Scones

Made with fresh cavolo nero right from the garden, these scones are the perfect way to incorporate healthy greens into your breakfast or tea!

  • 1 white onion

  • 6 large kale leaves 

  • 375g plain flour

  • 6 teaspoons baking powder

  • 1 teaspoon sea salt

  • 50ml olive oil

  • 250ml plant milk

  • Pumpkin seeds 

step 1

Finely slice the onion and fry in olive oil for a couple of minutes.

Remove the tough parts of the kale stems and finely slice the leaves. Add to the onions and fry everything until soft.

step 3

Add flour, baking powder and salt to a mixing bowl and stir to combine.

step 4

Add the olive oil and plant milk and use a fork or your hands to combine.

step 5

Add the kale and onion mix and gently combine everything with you hands.

step 6

Put 8 blobs of scone mix onto a lined baking tray.
Sprinkle with pumpkin seeds if using.

Bake at 180°C for 10-12 mins or until golden.
